Step by step to make Veg Kolhapuri
Step 1
First, you need to cut the vegetables of your own choice into thick strips or small pieces. Keep it in the steamer pan, pressure cooker, or steamer. Make sure all the veggies are cooked properly but they should retain their shape.
Step 2
In the meantime, take all the ingredients which are required to make Kolhapuri masala. In case you don’t have nagshekar (cobra’s saffron), stone flower (Patthar phool), or poppy seeds (khus khus) it is still fine.

To make Kolhapur masala, take a frying pan and dry the spices like black peppers, cumin, stone flower, tej patta, cloves, cinnamon, coriander, red chilies, green cardamom, black cardamom seeds, and nutmeg powder.
Step 4
Once you can notice the fragrance, then add in the sesame seeds, poppy seeds, and desiccated coconut. Stir it continuously and dry it till the time the coconut becomes golden in color. Once the spices get cooled down, mix them in the grinder. In case it is difficult to grind, you should add some water.
Step 5
Now take a pan and add in chopped onions and saute them properly, till the time they turn golden brown. After that, add ginger & garlic paste.
Step 6
You need to stir and then add chopped coriander leaves. Stir it properly and saute it till the ginger-garlic aroma goes away.
Step 7
Now, you need to add chopped tomatoes and saute them properly, till the time they become soft and leave the sides.
Step 8
Add red chili powder, turmeric powder, and asafoetida. You need to stir it and then add capsicum & bell pepper. Stir it and saute it, till the time it has a slight crunch.
Step 9
Add in the Kolhapuri masala and then water it with some salt. Let the curry come to a simmer.
Step 10
When you see oil floating on the top, add in the veggies and let it stir for 2 minutes. By this time, the curry will be thin. Check the taste to see if salt is okay in it or not. If the salt is less, add in more. You will notice all the spices will come in together.
Step 11
Now you need to add chopped coriander leaves and give it a proper mix. Garnish it with chopped coriander leaves.
What to serve it with?
You can serve it with bhkaris, parathas, or soft phulkas. You can have it with steamed rice or bread.
